This black bean salad recipe makes a yummy side dish or vegan/ vegetarian main dish that is so simple, flavorful and satisfying!
This one has that hunger crushing combo, in plant-based fashion: protein and fiber. So it is super filling and also very delicious.
Cold salads like this appeal most to me in the the warmer temperatures, but you can totally enjoy this any time of year!
How to make black bean salad
First, gather your ingredients.
Ingredients
For tastiest results, always use the best quality ingredients you have access to.
To make this black bean salad recipe, you will need the following:
- canned black beans
- corn kernels – fresh or canned
- cherry tomatoes
- avocado
- red onion
- cilantro
- olive oil
- lime juice
- red wine vinegar
- garlic powder
- cumin
- salt and pepper
Assembling black bean salad
Add all salad ingredients to a large bowl.
In a smaller bowl, mix together the dressing ingredients. Pour the dressing over the salad and toss to coat it all.
Top with more chopped cilantro and serve.
And, even though this is meant to be a salad – of course, tortilla chips are never a bad idea. Because, balance! 😉
Storing leftovers
This salad will save well. To store leftovers, refrigerate in a non-metallic air tight container for 3 to 4 days.

For the salad
- 2 15 ounce cans black beans – drained and rinsed
- 3 cups corn kernels – fresh or canned
- 2 cups cherry tomatoes – sliced
- 1 ripe avocado – peeled seeds removed and diced
- ¼ cup diced red onion
- ¼ cup fresh chopped cilantro – plus more for garnish
For the dressing
- ¼ cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Add all salad ingredients to a large bowl.
- In a smaller bowl, mix together the dressing ingredients.
