- lettuce
- cabbage
- carrots
- edamame
- red bell pepper
- diced cucumber
- scallions
- cilantro
- cashews
For the dressing you will need:
- peanut butter
- Tamari (or soy sauce)
- maple syrup
- Sriracha
- sesame oil
- lime juice
- water

You will need the following to make Thai salad:
- a sharp knife – this is my favorite knife set
- cutting board
- measuring cups
- measuring spoons
- serving bowl
Assembling Thai salad
Add all salad ingredients to a large bowl and lightly toss to combine.
Making the dressing
Making the homemade peanut dressing is super simple!
Place all of the dressing ingredients into a blender and blend until smooth. Add some water ½ teaspoon at a time to thin the dressing out if needed. Alternatively, you can use a whisk to combine everything.
Drizzle some of the dressing over the salad.
Toss lightly, and drizzle a little extra dressing over the top. Reserve any excess for serving.

Ingredients
For the salad
- 2 cups romaine lettuce – sliced into thin strips
- 1.5 cups red cabbage – thinly sliced
- 1 cup napa cabbage – thinly sliced
- 1 cup shredded carrots
- 1 cup shelled edamame cooked and cooled
- 1 red bell pepper – sliced into thin strips
- 1 cup diced cucumber
- ½ cup sliced scallions
- ¼ cup fresh cilantro minced
- ½ cup cashews chopped
For the thai peanut dressing
- 1/2 cup peanut butter
- 2 Tablespoons Tamari low sodium, or soy sauce
- 1.5 Tablespoons Maple syrup
- 1 teaspoon Sriracha
- 1 teaspoon sesame oil
- 1.5 Tablespoons lime juice juice of one lime
- 1/4 cup water or add more until desired consistency
Instructions
- Add all salad ingredients to a large bowl and lightly toss.
- Place all of the dressing ingredients into a blender and blend until smooth. Add some water ½ teaspoon at a time to thin the dressing out if needed.
