Ingredients

For the salad

  • 2 15 ounce cans black beans - drained and rinsed
  • 3 cups corn kernels - fresh or canned
  • 2 cups cherry tomatoes - sliced
  • 1 ripe avocado - peeled seeds removed and diced
  • ¼ cup diced red onion
  • ¼ cup fresh chopped cilantro - plus more for garnish

For the dressing

  • ¼ cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Add all salad ingredients to a large bowl.
  2. In a smaller bowl, mix together the dressing ingredients.
  3. Pour the dressing over the salad and toss to coat it all.
  4. Top with more chopped cilantro and serve.
