Tomato cucumber avocado salad is a bright, fresh and flavorful salad that is perfect as a summer side dish.
Ingredients
For the salad
- 1 cup cherry tomatoes chopped/ halved
- 1 cup english cucumber chopped
- ½ cup red onion sliced
- 1 cup avocado diced
- 2 tablespoons fresh dill chopped
- 2 tablespoons fresh parsley chopped
For the dressing
- ¼ cup Red wine vinegar
- ¼ cup Olive oil
- 1 tablespoon honey
- Salt and pepper
Instructions
- Add all salad ingredients to a large bowl.
- Combine all dressing ingredients in a bowl or mason jar and mix until fully combined.
- Pour the dressing over the salad and lightly toss to coat all of the veggies and herbs in the tangy light dressing.
- Serve cold.
