Ingredients

For the salad

  • 1 cup cherry tomatoes chopped/ halved
  • 1 cup english cucumber chopped
  • ½ cup red onion sliced
  • 1 cup avocado diced
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh parsley chopped

For the dressing

  • ¼ cup Red wine vinegar
  • ¼ cup Olive oil
  • 1 tablespoon honey
  • Salt and pepper

Instructions

  1. Add all salad ingredients to a large bowl.
  2. Combine all dressing ingredients in a bowl or mason jar and mix until fully combined.
  3. Pour the dressing over the salad and lightly toss to coat all of the veggies and herbs in the tangy light dressing.
  4. Serve cold.
