I just wanted to drop in real quick to show y’all this lighter way to enjoy Thanksgiving leftovers. It is so simple and delicious too! And very filling for a salad.
Yep, I like my salads with some substance. This leftover turkey cranberry salad delivers with craisins, parmesan cheese and pine nuts. Oh, and leftover turkey…duh!
I will be eating my mom’s leftover oven roasted turkey breast on this salad. It is perfection.

Leftover Turkey Cranberry Salad
Ingredients
- 2 cups mixed greens
- 5 ounces leftover turkey breast
- 2 Tablespoons shaved parmesan cheese
- 1/4 cup dried cranberries sweetened (a.k.a. craisins)
- 2 Tablespoons pine nuts
- 2 Tablespoons balsamic vinaigrette
Instructions

Make a bed of greens on the plate.

Assemble the rest of the ingredients on top.

Dress with balsamic vinaigrette dressing.
