This strawberry avocado salad is so simple, yet so delicious.
I am always looking for new ways to liven up salad. We all can get stuck in a rut sometimes when it comes to salad. My rut happens to be lettuce, tomato and cheddar cheese. I love that combination, but I get bored with it.
Changing up salad toppings can totally change everything!
And the possibilities are endless!
This particular strawberry avocado salad combines two of my favorite things: strawberries and avocados. YUM. The sweet and tart strawberries with the creaminess of the avocado and the crunch of those pistachios…it’s simply delicious!
I am using balsamic vinaigrette on this salad. But my strawberry vinaigrette would also be really, really good on this salad.
My strawberry avocado salad makes a great side dish. But you could certainly bulk it up to a full meal. For the vegans and vegetarians, you could just make it bigger. For all you omnivores out there, try adding some protein on top. May I suggest my grilled chicken? It would be so good on this!
Strawberry Avocado Salad Recipe
Strawberry Avocado Salad
- 2 cups mixed baby greens
- 3 strawberries washed and sliced
- 1 tablespoon chopped pistachios
- 1/4 medium avocado sliced
- 1 serving my balsamic vinaigrette
- Make a bed of greens on the plate.
- Add strawberries, avocado and pistachios.
- Top with balsamic vinaigrette.
- Serve immediately.
