Ingredients
- 8 ounces broccolini trimmed & halved lengthwise if thick
- 3 tablespoon extra virgin olive oil divided
- 4 cloves garlic minced
- 1/4 teaspoon red pepper flakes
- 1 teaspoon lemon zest (about 1/2 lemon)
- 2 tablespoons capers chopped
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon lemon juice
- 1/4 cup shaved Parmesan cheese as garnish (optional)
Instructions
- Add 2 tablespoons of oil to a large nonstick skillet and turn the heat to medium.
- Mix in the garlic, red pepper flakes, lemon zest and capers. Cook for 1-2 minutes stirring frequently, until fragrant (be careful not to burn the garlic).
- Add the broccolini, drizzle with remaining tablespoon oil, salt and pepper and stir to coat.
- Cook for 2 minutes, stirring occasionally.
- Add 2 tablespoons of water to the pan, then mix everything together and cook for another 2-3 minutes until the water has evaporated.
- Turn off the heat and mix in the lemon juice.
- Transfer broccolini to a serving plate and optionally garnish with shaved parmesan.
