Ingredients
8ouncesbroccolinitrimmed & halved lengthwise if thick
3tablespoonextra virgin olive oildivided
4 clovesgarlicminced
1/4teaspoonred pepper flakes
1teaspoonlemon zest(about 1/2 lemon)
2tablespoonscaperschopped
1/2teaspoonKosher salt
1/4teaspoonfreshly ground black pepper
1tablespoonlemon juice
1/4cupshaved Parmesan cheeseas garnish (optional)
Instructions
Add 2 tablespoons of oil to a large nonstick skillet and turn the heat to medium.
Mix in the garlic, red pepper flakes, lemon zest and capers. Cook for 1-2 minutes stirring frequently, until fragrant (be careful not to burn the garlic).
Add the broccolini, drizzle with remaining tablespoon oil, salt and pepper and stir to coat.
Cook for 2 minutes, stirring occasionally.
Add 2 tablespoons of water to the pan, then mix everything together and cook for another 2-3 minutes until the water has evaporated.
Turn off the heat and mix in the lemon juice.
Transfer broccolini to a serving plate and optionally garnish with shaved parmesan.
