Homemade Cookies and Cream Ice Cream (No Churn)

Homemade cookies and cream ice cream is one of our family’s favorite desserts, and you don’t even need an ice cream maker to make it!

What is no churn ice cream?

Did you even know this was a thing, internet friends?! You can totally make homemade ice cream without an ice cream maker! We got rid of our clunky old ice cream maker after we learned this little trick. Yes, really.

Basically, the only thing you need is something to whip the heavy cream. You could use a stand mixer, hand mixer or even a blender. I prefer my stand mixer.

If you are hard core, you could even whip that cream by hand. 🤣💪🏻I’ve seen it done, but I would NOT recommend it.

All the other ingredients are gently folded into that whipped cream. Let me show you!

How to make homemade ice cream without an ice cream maker

Whipping the cream is the first step. You want to see those peaks, y’all. It should look like this.

For the cookies and cream flavor, we use crushed Oreo-like cookies. We like the Trader Joe’s ones the best. I just beat them into pieces inside a storage bag with a wooden spoon.

Next, we are going to fold all other ingredients into our whipped cream. For this recipe, it is just a can of sweetened condensed milk, a splash of vanilla extract and crushed cookies. That’s it!

I’ve made it without the vanilla many times too, and it is still good. So if you don’t have any vanilla extract, you can still make it! You just keep folding until everything is well-incorporated.

Then add it to a freezer safe dish. Hint: a loaf pan is the perfect size! I also have several freezer safe containers of a similar size that we use. Anyway, just spread out the mixture evenly in the dish to remove any large air bubbles.

Cover and freeze overnight, or at least 7 or 8 hours. And voila! You have the most perfect homemade cookies and cream ice cream with very little effort.

Ingredients

  • 1 can sweetened condensed milk (14 ounces)
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract (optional)
  • 14 chocolate cookies with cream filling (We like Trader Joe's cookies, called Joe Joes)
  • 1 large storage bag with zip closure (like Ziplock)

Instructions

  1. Place the cookies in a large storage bag, and seal it. Use a wooden spoon to crush the cookies into pieces.

  2. Pour the heavy cream into a large bowl, and beat with a mixer on high to medium-high until peaks form. Mine took about 5 minutes, FYI.

  3. Gently fold in the vanilla, sweetened condensed milk and crushed cookies until everything is well-incorporated.

  4. Transfer to a freezer-safe dish, cover and freeze until set, about 8 hours. Hint: I usually make mine the night before we eat it.

Recipe Notes

You can make this without the vanilla, and it will still be great!

You can whip your cream with a stand mixer, hand mixer or even a blender. Careful not to over-whip it though, because it will turn into butter! Just beat it long enough until peaks start to form. With my hand-held mixer, it was about 5 minutes, FYI. It may be quicker than that in a blender.
