Black eyed pea salad is a unique and delicious way to eat your veggies. This recipe is perfect for a lucky new year, and we all could use a little of that, right?

This is a great side dish and a delicious salad to make and eat all year long! It is even good eaten with tortilla chips around the pool in the summer. If you are wanting some good luck on New Year’s Day, this is an easy recipe that makes a great option. Here is how to make it.
How to make black eyed pea salad
First, gather your ingredients.
Ingredients
For tastiest results, always use the best quality ingredients you have access to. To make this black-eyed pea salad, you will need the following:
- black-eyed peas
- English cucumber
- red bell pepper
- cherry tomatoes
- corn
- red onion
- parsley
- olive oil
- red wine vinegar
- dijon mustard
- honey or maple syrup
- dried oregano
- salt and pepper
Really any fresh herbs would be great in this!
Making the dressing
Make the dressing by combining all of the dressing ingredients in a mason jar and then shake well to emulsify.
Alternatively, you can just make the dressing in a small bowl, or even in the bottom of the large mixing bowl, and whisk it all together. Making it separate and pouring it over the top works best for distributing the dressing, in my opinion.
Assemble black eyed pea salad
Add all salad ingredients, except the parsley to a large bowl. Pour the dressing over the salad.
Then toss everything together then top the salad with the chopped parsley. How easy is that?! And would you just look at all of those gorgeous colors.
Store leftover salad in an airtight container in the refrigerator for up to 5 days.
This one is perfect for New Year Day, but it would also be excellent for a side dish while grilling out during the warmer months.

- 15 ounces black eyed peas one can – drained and rinsed well
- 1 seedless English cucumber – diced
- 1 red bell pepper – trimmed, seeds removed and diced
- 5 ounces cherry tomatoes – quartered
- 1 cup corn
- ¼ cup red onion – diced
- chopped parsley – optional for topping
For the vinaigrette dressing
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon maple syrup or honey
- 1 teaspoon dried oregano
- Kosher salt
- Ground black pepper

I noticed that 320 calories per lg serving. Question is how man ounces or grams per serving…I may have missed reading that…Thanjs for your response.

Hi LaVerne. One hearty serving is one fourth of the total recipe. There may be some variation (on cups) depending on the size of cucumber, pepper, etc. It would also be less if you don’t use all the dressing.
