Chicken Marinade

This simple Chicken Marinade Recipe is one of my go-to recipes. It makes meal prep much easier and guarantees flavorful, juicy chicken every time. It’s bright, garlicky, herby, and really versatile, so you can use it for all sorts of meals during the week. Use your chicken for salads, wraps, flatbreads, grain bowls, or pasta!

My favorite thing about this marinade is that it uses simple ingredients but adds a lot of flavor to the chicken. It works well with chicken breasts, thighs, drumsticks, and wings, so you can use whatever you have available.

The best part is that it only takes a few minutes to put together.

How to make marinated chicken

First, gather your ingredients.

For the best taste, always use the highest quality ingredients you have access to.

To make this marinated chicken recipe, you will need the following ingredients:

For the marinade

  • olive oil
  • kosher salt
  • ground black pepper
  • fresh lemon juice
  • Italian seasoning
  • garlic cloves

For the chicken

  • chicken – You can use boneless skinless chicken breasts, boneless skinless thighs, bone-in thighs or drumsticks, or chicken wings.

If you don’t have olive oil, avocado oil is a good substitute. Orange juice can be swapped for lemon juice. If you prefer, you can substitute poultry seasoning for the Italian seasoning.

Making marinated chicken

This Chicken Marinade is a simple recipe that takes just a few steps to make. Here is how to make it.

First, combine the olive oil, kosher salt, black pepper, fresh lemon juice, Italian seasoning, and minced garlic in a bowl or jar. Mix well until everything is blended.

Put your chicken in a zip-top bag or shallow dish and pour the marinade over it. Seal the bag, press out extra air, and move the chicken around so it’s fully coated.

Let the chicken marinate for at least 30 minutes, or up to 12 hours for more flavor.

When you are ready, grill or bake the chicken as desired.

Leftovers

Store leftover cooked marinated chicken in a covered container in the fridge for up to three days.

Always use common sense and good judgment when it comes to leftovers, though! If something looks or smells funky, don’t eat it.

Ingredients

Marinade

  • 1/4 cup olive oil
  • 1 1/2 teaspoons kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons Italian seasoning
  • 6 garlic cloves minced

Chicken

  • 1 1/2 pounds chicken of choice Boneless skinless chicken breasts, boneless skinless chicken thighs, bone-in chicken thighs or drumsticks, and chicken wings all work well.

Instructions

  1. Mix all of the marinade ingredients together.
  2. Pour the marinade into a zip-top bag with the chicken. Seal the bag, removing as much air as possible, and move the chicken around so it is evenly coated.
  3. Let the chicken marinate for at least 30 minutes or up to 12 hours. Do not exceed 24 hours because the lemon juice can start to affect the texture of the chicken.
  4. Grill or bake the chicken as desired.

Recipe Notes

If you want to prep the marinade ahead of time, leave out the lemon juice. Add the lemon juice to the chicken and marinade a couple of hours before cooking.
