Mornings around my house can get pretty cray. 😬 Getting two tiny humans dressed, fed and ready for the day is not for the weak, y’all.
I have become very good at whipping up something very, very simple for breakfast. And avocado toast has been on eat-and-repeat lately. YUMYUMYUMYUM!

I am also really loving Trader Joe’s Daily Bread sprouted multigrain bread. It’s like their version of Ezekiel bread, but better tasting in my opinion!
Sometimes is it literally just mashed up avocado on a piece of toast. And lately I have been adding some baby heirloom tomatoes plus a little pink Himalayan salt.
And it is SUCH a delicious and simple combination. 👌🏻😋

Avocado Toast
Avocado toast is one of my go-to easy breakfasts that is full of flavor and healthy, filling fats, and it happens to be totally plant-based/ vegan.
Ingredients
- 1/2 ripe avocado
- 2 slices whole grain toast (or toast of your choice)
- 2/3 cup halved baby heirloom tomatoes
- pink Himalayan salt, to taste (or salt of choice)
Instructions

Add avocado slices to each piece of toast, and use a fork to mash up so it is spreadable.

Add tomatoes on top.

Sprinkle with pink Himalayan salt (or your choice of salt) to taste.

I discovered avocado toast a couple weeks ago. I mash up my avocado and add some garlic salt, a tad of lemon juice and a few (just a few) red pepper flakes. Mix up and spread on toast. Aunt Millies 12 Whole Grains to be precise. LOL. Yum….

Looks yummy and pretty close to the way I make it but pretty much lacking in protein.

Thank you! 💚 FYI: The bread that is pictured (Dave’s killer bread) is 5 g protein each slice, and the avocado is 2 grams for 1/2 an avocado, or 4 grams for the whole thing = 12 to 14 grams of plant-based protein power.🥑💥💪🏻 That is the same as two eggs. 👍🏻👌🏻
