I hope that you all had a wonderful weekend! With Spring in the air, we spent a lot of time outside.
It’s a new week! So I am sharing our meal plan for the week.
I am trying a couple new things this week – Seafood foil packets inspired by this recipe at A Healthy Slice of Life. Brittany made hers on the grill, but I am going to make mine in the oven. My husband doesn’t love mushrooms, so I may change up the veggies a bit as well.
I am also trying a pre-made soup that I found at Costco. I throw easy meals like this in to help me feel less overwhelmed during the week.
Lunches during the week usually consist of leftovers with the occasional sandwich. Breakfasts are usually oatmeal, eggs or egg sandwiches.
