Weekly Meal Plan

Hope everybody had a great weekend! Today I am sharing our weekly meal plan. I try to plan our meals around our life, not the other way around.

So for example this week I have two work days that will be out of my norm. Normally I work from home. So I am able to squeeze in some dinner prep (sometimes, if work load allows) before I go to pick up my son from daycare. This week I will be at a local conference for two days, and I need some easy dinners on my plan. One freezer meal takes care of one of those nights. A store cooked rotisserie chicken with some easy sides takes care of the other.

Also, I carried over one meal that I never made last week – fish, stovetop parmesan garlic grits and broccoli. Plans for the night changed, and so we just ate leftovers the night I was originally supposed to make it. So I carried it forward to this week’s menu.

I am also trying a new recipe from the new Weight Watchers cookbook – Shrimp, chorizo and rice stew. I have had chorizo, but I myself have never cooked with it. So I am excited to try this recipe! And I am loving the cookbook too, by the way.

Another recipe link I will share is my chili. I will be using turkey this week to make it a little bit leaner.

    Hi Marjorie! I can’t thank you enough for your blog full of helpful tools and tips. Please continue doing this as you are such an inspiration. I wanted to know if you had a recipe for spaghetti. Mine is packed with calories. Also, can you tell if you’re able to taste the spinach in the smoothies? Thanks again!

      I don’t have a specific recipe for spaghetti, but maybe I’ll write one! A few tips: I always drain the fat off my meat. Plus I volumize with adding sautéed veggies to the sauce (mushrooms, peppers, onions and garlic).

      I am not able to taste the spinach in my smoothies…that is the beauty of adding it…the fruit overpowers it.
