Thai salad with peanut dressing is a fresh, beautiful and delicious salad that everyone goes crazy for.

This makes a great side dish. Alternatively, you can add some tofu or rice noodles to make it more of a main dish type situation.

How to make Thai salad

First, gather your ingredients.

Ingredients

For tastiest results, always use the best quality ingredients you have access to.

To make this (recipe name), you will need the following. For the salad you will need:

  • lettuce
  • cabbage
  • carrots
  • edamame
  • red bell pepper
  • diced cucumber
  • scallions
  • cilantro
  • cashews

For the dressing you will need:

  • peanut butter
  • Tamari (or soy sauce)
  • maple syrup
  • Sriracha
  • sesame oil
  • lime juice
  • water

You will need the following to make Thai salad:

  • a sharp knife – this is my favorite knife set
  • cutting board
  • measuring cups
  • measuring spoons
  • serving bowl

Assembling Thai salad

Add all salad ingredients to a large bowl and lightly toss to combine.

Making the dressing

Making the homemade peanut dressing is super simple!

Place all of the dressing ingredients into a blender and blend until smooth. Add some water ½ teaspoon at a time to thin the dressing out if needed. Alternatively, you can use a whisk to combine everything.


Drizzle some of the dressing over the salad.

Toss lightly, and drizzle a little extra dressing over the top. Reserve any excess for serving.

Ingredients

For the salad

  • 2 cups romaine lettuce – sliced into thin strips
  • 1.5 cups red cabbage – thinly sliced
  • 1 cup napa cabbage – thinly sliced
  • 1 cup shredded carrots
  • 1 cup shelled edamame cooked and cooled
  • 1 red bell pepper – sliced into thin strips
  • 1 cup diced cucumber
  • ½ cup sliced scallions
  • ¼ cup fresh cilantro minced
  • ½ cup cashews chopped

For the thai peanut dressing

  • 1/2 cup peanut butter
  • 2 Tablespoons Tamari low sodium, or soy sauce
  • 1.5 Tablespoons Maple syrup
  • 1 teaspoon Sriracha
  • 1 teaspoon sesame oil
  • 1.5 Tablespoons lime juice juice of one lime
  • 1/4 cup water or add more until desired consistency

Instructions

  1. Add all salad ingredients to a large bowl and lightly toss.
  2. Place all of the dressing ingredients into a blender and blend until smooth. Add some water ½ teaspoon at a time to thin the dressing out if needed.
  3. Add some dressing and toss to combine.

  4. Drizzle a little more of the dressing over the salad, and reserve any excess for serving. Serve cold and enjoy!
