This summer salad with berries, goat cheese and pine nuts is perfect no-cook, just-assemble dish that tastes oh so fresh and delicious! We like it as a side dish to grilled salmon or Instant Pot chicken breasts. I also make it alongside a sandwich for lunch.
I top it with my all time favorite salad dressing – my homemade balsamic vinaigrette. I almost always have some of this in my fridge, y’all. It is just so good, and it is so versatile.
The sweet and tangy taste of the dressing is the perfect compliment to the creamy goat cheese, crunchy pine nuts and sweet berries. 😋

Summer salad with berries, goat cheese and pine nuts
This is the perfect summer salad with fresh blueberries, strawberries, goat cheese and pine nuts topped with homemade balsamic vinaigrette.
Ingredients
- 1.5 to 2 cups mixed baby greens
- 1/4 cup fresh blueberries
- 1/4 cup sliced fresh strawberries
- 2 Tablespoons my homemade balsamic vinaigrette
- 1 Tablespoon goat cheese crumbles (more or less, to taste)
- 2 Tablespoons pine nuts (more or less, to taste)
Instructions

Place greens on a salad plate.

Add berries, pine nuts and goat cheese on top.

I like to serve the salad undresses and let people spoon the dressing on just prior to eating. Otherwise, the lettuce goes limp.

Ingredients are approximate, and feel free to add more (or less!) of anything to your liking. 😉👌🏻
One serving size is listed, but it is simple to do a bigger version in a big salad bowl. Just roughly multiply each ingredient amount to the number of people you are serving.
