You could almost call this deviled egg salad because the ingredients are so similar to deviled eggs. It is super yummy in some lettuce cups. These endive leaves are perfect!

How to make the best egg salad
Start with some hardboiled eggs. You can do Instant Pot hardboiled eggs if you prefer.
You will want to peel and dice your eggs. I like to dice mine pretty small. I cut them in half, and then I make 4 rows with each half. I dice into little cubes after that, as shown here.
After all the eggs are diced up, I just put them in a mixing bowl and add the other ingredients.
And just mix it up the egg salad from there. I add a dash of salt and pepper. Mine didn’t need mush salt, since there was already some in the mayo and mustard. So be sure and taste first!
Optional add ins or substitutions
This egg salad recipe is super easy to modify. So feel free to make it your own! There are a few other things you could add to this base recipe.
- Diced celery
- Diced roasted red pepper
- Chives in place of green onion
- Fresh herbs, such as dill, parsley or thyme
- A sprinkle of sweet paprika for garnish
- A little squeeze of Sriracha
- I prefer mayo, but I have seen some sub mashed avocado + salt in place of mayo.

Ingredients
- 6 eggs hardboiled, peeled and diced
- 3 Tablespoons mayonaise
- 1 teaspoon dijon mustard
- 2 Tablespoons sweet pickle relish
- 2 Tablespoons green onion diced, about 1 stalk
- salt and pepper to taste - mine did not need much additional salt (what was already in the mayo was just about enough for me👌🏻)
- optional add ins: chopped fresh dill, diced roasted red pepper, paprika for garnish
Instructions

Add diced eggs and all other ingredients to a mixing bowl, and stir to combine.

Salt and pepper to taste.

Serve on a sandwich, in lettuce cups or crackers.
