I grew up in Montgomery, and every time we traveled to Birmingham, we would stop in Clanton and get some fresh produce.

Durbin Farms and Peach Park are our favorite spots, and they both have a variety of excellent produce. But nothing can beat their peaches! It’s what they are famous for.

My mom, dad and sister came to visit us in Birmingham this weekend. It was so great to see them!

They live in Destin, FL now, and they pass through Clanton on the way up to Birmingham. So they stopped Durbin Farms, and they brought us some fresh peaches. Is there anything better in the summer than a fresh peach?!

So I have been using those peaches as my recipe inspiration this week. And today’s recipe? Fresh peach salsa! YUM.

You can serve this easy peach salsa on salty tortilla chips, and it is complete perfection as an appetizer. It would also be fantastic on some fish tacos! I think I need to work that into my meal plan for later this week.

My batch turned out with a little more heat than I intended. If you want less heat, be sure and remove the jalapeños seeds and membranes. And don’t touch your eyes for a while after handling jalapeños. It will burn! You could always wear gloves.

I recommend that you use fresh, ripe peaches for this. But! If you want to make it out-of-season, or if you don’t have access to fresh peaches, you can use canned peaches. Just drain and dice them. Use about two cups of the diced peaches as a substitute.

Ingredients

  • 2 large peaches peeled and diced
  • 1 medium tomato diced (about 1 cup )
  • 1 small jalapeno pepper de-seeded and diced
  • 1/2 medium red onion
  • 2 Tablespoons chopped cilantro
  • Juice of 1 small lime
  • 1/8 teaspoon salt dash of pepper (or more to taste)

Instructions

  1. Assemble ingredients in a mixing bowl.
  2. Gently stir to combine.
