Today I am sharing a simple snacking idea that is perfect for watching some football – this popcorn with smokehouse almonds and dark chocolate.

After some silence on the blog front, I am jumping back in with this simple and tasty snack that is perfect for game day snacking.

Pregnancy has been hitting me HARD the past few weeks. Well, pregnancy + wicked awful sinus infection that will NOT go away.

That being said, my recipes tend to reflect the season of life I am in at them moment. And right now I am all about SIMPLE. Easy. No fuss. But still reeeally yummy!

This little snack mix fits that bill, with basically only 3 ingredients: popcorn, dark chocolate morsels and my new favorite flavored almond: Blue Diamond Smokehouse almonds!

The mix of sweet, salty and smoky in this little snack is pure bliss in my mouth. I cannot. Stop. Eating this! YUM!

I also love that this snack is a little more “real food” friendly than the go-to chips and dip. Not that I don’t partake in those too! But sometimes you just want something a little bit healthier.

So between baby nursery prep and decking this halls this week, we have managed to grab some relaxing couch time, watch some college football, and eat some really yummy snacks.

Just a note: you can use any popcorn to make this snack. But may I recommend my own DIY microwave popcorn? It is so simple and so delicious. I honestly cannot remember the last time I ate the bagged stuff. I love that it is cheaper and that I can totally control the quality of ingredients. I use coconut oil about 90% of the time. But canola oil also works.

Ingredients

For the popcorn:

  • 3 Tablespoons popcorn kernels
  • 1 teaspoon coconut oil
  • salt to taste
  • Note: You can use any popcorn in this recipe but I am using my own DIY microwave popcorn.

For the topping:

  • 2 Tablespoons dark chocolate morsels
  • 1/4 cup Blue Diamond Smokehouse Almonds

Instructions

  1. Pop the popcorn according to your preferred method. I am using my DIY popcorn recipe.
  2. Sprinkle the almonds and dark chocolate on top.
  3. Enjoy!
