I hope you week is off to a great start! Here is what is on my meal plan for this week.
There are a few recipe links I can share:
- Chicken tamale bake from Emily Bites – this is a new (to me) recipe
- Chicken lentil soup from SkinnyTaste – a favorite that I have made several times
- My lightened up pesto recipe
Also the tilapia with spinach and grapes is from the Weight Watchers What to Cook Now* cookbook. I have made it before, and we liked it. So it is back on the meal plan.
Saturday, as you may or may not know, is the start of college football season! We are big college football fans in our house. Part of the fun of football season for me is the food! Shocker, I know. We love to have family and/or friends over to watch the game. So we are excited to kick the season off. My alma mater, Auburn, is playing the Arkansas Razorbacks! Hence the BBQ pork roast for dinner. 🙂
I have wanted to experiment with making my own BBQ sauce. I will have to do some Pinterest research and see what I can come up with. I’ll have to let you know how that goes. Have you ever made your own BBQ sauce? What are you cooking up this week?
