How to make Breakfast Pizza
First, gather your ingredients.
Ingredients
For best taste, always use the highest quality ingredients you have access to.
To make this Breakfast Pizza recipe, you will need the following ingredients:
- prepared pizza dough
- avocado oil
- breakfast sausage
- baby spinach
- Kosher salt
- pizza/marinara sauce
- yellow/gold potatoes
- mozzarella cheese
- large eggs
- avocado
- black pepper
- hot sauce
- fresh parsley
This recipe is easily customizable for your own family’s tastes and preferences. You could add scrambled eggs with cheese instead of whole eggs, if that’s what you prefer. Additionally, a shredded cheddar cheese blend would work well in place of the mozzarella. Are you a bacon lover? Add crumbled bacon to your pizza in addition to the sausage! Do you make biscuits and gravy often? Use the gravy as your pizza sauce in place of the marinara/pizza sauce.
Making Breakfast Pizza
Breakfast Pizza is a simple recipe that can be made in just a few steps. Here is how to make it.
Brown the Sausage
First, brown the sausage on the stovetop. Add the spinach and a bit of salt and cook until the spinach is wilted.
Preheat Oven and Prep Dough
Preheat your oven to 425°F. Line your baking sheets with parchment paper and divide your dough into four equally-sized balls. On a floured surface, roll out each ball of dough into an 8″ round and place onto the parchment-lined baking sheets.
Top The Pizzas
Add the sauce and thin slices of potato to the pizzas.
Divide the remaining toppings (minus the eggs and garnish) across all four pizzas.
Bake
Bake for 8 minutes until the cheese begins to melt.
Create a little divot on each of the pizzas and crack the egg in the divot. Bake for another 12-15 minutes, until the eggs are set.
Garnish and Enjoy
Remove from the oven and top with any additional toppings you enjoy, like hot sauce, parsley, and avocado.
Leftovers
Store leftovers in a covered container in the fridge for 2-3 days.
Always use common sense and good judgment when it comes to leftovers, though! If something looks or smells funky, don’t eat it.

To the cooked sausage, add the spinach with 1⁄2 teaspoon salt and another cook 2 minutes until it begins to wilt. Turn off the heat and set the pan aside.
- Preheat the oven to 425°F. Line 2 baking sheets with parchment paper and set aside.
- Divide the pizza dough into 4 equal portions. Roll each piece of dough into a roughly 8-inch oval on a floured surface. Transfer two pizzas onto each baking sheet.
- Divide the following toppings among the 4 pizzas in the following order: sauce, potatoes, sausage/spinach and mozzarella.
- Bake for 8 minutes until the cheese begins to melt.
- Use a spoon to make a crevice in the center of each pizza and crack 1 each egg into each pizza. Return to the oven for another 12-15 minutes until the egg white is set and cooked through.
- Remove pizza from the oven and top with sliced avocado, salt, pepper, hot sauce and fresh parsley.
Recipe Notes
- Instead of using raw pizza dough, you can also opt to use 2 medium or 4 mini pre-made pizza dough crusts.
- Make sure the potatoes are SUPER thinly sliced so that they cook fully in the oven.
- Feel free to add your favorite pizza garnishes such as red pepper flakes, oregano and garlic powder!
