Breakfast Pizza

Our delicious breakfast pizza is the perfect meal to make for a warm, hearty breakfast for your family!

Ingredients

  • 1 pound prepared pizza dough homemade or store bought, at room temperature
  • 1 teaspoon avocado oil
  • 8 ounces your favorite breakfast sausage casing removed
  • 5- ounce bag baby spinach
  • 1/2 teaspoon Kosher salt plus more for garnish
  • 1 cup jar pizza/marinara sauce
  • 1 medium yellow/gold potatoes very thinly sliced
  • 6 ounces mozzarella cheese torn into chunks (or approx. 2 cups shredded mozzarella)
  • 4 large eggs
  • 1 medium ripe avocado thinly sliced
  • Freshly cracked black pepper for sprinkling
  • Hot sauce optional as garnish
  • Fresh parsley optional as garnish

Instructions

  1. Heat a medium fry pan with oil until hot over medium-high heat. Add the sausage and break apart, cooking for 5 minutes until browned and mostly cooked. Strain off any excess fat and discard. To the cooked sausage, add the spinach with 1⁄2 teaspoon salt and another cook 2 minutes until it begins to wilt. Turn off the heat and set the pan aside.
  2. Preheat the oven to 425°F. Line 2 baking sheets with parchment paper and set aside.
  3. Divide the pizza dough into 4 equal portions. Roll each piece of dough into a roughly 8-inch oval on a floured surface. Transfer two pizzas onto each baking sheet.
  4. Divide the following toppings among the 4 pizzas in the following order: sauce, potatoes, sausage/spinach and mozzarella.
  5. Bake for 8 minutes until the cheese begins to melt.
  6. Use a spoon to make a crevice in the center of each pizza and crack 1 each egg into each pizza. Return to the oven for another 12-15 minutes until the egg white is set and cooked through.
  7. Remove pizza from the oven and top with sliced avocado, salt, pepper, hot sauce and fresh parsley.

Recipe Notes

  • Instead of using raw pizza dough, you can also opt to use 2 medium or 4 mini pre-made pizza dough crusts.
  • Make sure the potatoes are SUPER thinly sliced so that they cook fully in the oven.
  • Feel free to add your favorite pizza garnishes such as red pepper flakes, oregano and garlic powder!
