Today I am sharing my meal plan for the week. My purpose for doing this is (1) that it helps me actually DO a meal plan and stay accountable. And (2) I have gotten feedback that it helps to give you guys some ideas for your own meals, plus maybe a few new recipes to try. I do share links to recipes where I can.
Monday – Black bean soup (freezer) and skillet corn bread
Tuesday – White bean and turkey sausage rigatoni
Wednesday – Rotisserie chicken (Costco), quinoa and butter peas
Thursday – Pork roast, potatoes and asparagus
Friday – Homemade pizza
Saturday – Turkey burgers and oven fries
Sunday – leftovers
This week will be our first full week to work after vacation, just to give you some context. So my first meal for the week is from the freezer: black bean soup. I will make some skillet corn bread to go with this.
I am trying one new recipe from my Better Homes and Gardens New Cook Book – White bean and turkey sausage rigatoni. The rest of the meals are regulars that we work into the rotation.

Thanks for the recipe! It made so much that I put half in the freezer before we went to the beach. Also, I mix it with some brown rice for my toddler, and he likes it too.
