I guess it is technically late winter.🤔 Although in Alabama it has been quite warm. We get a little bit of everything in Alabama during the winter.

But back to the spinach salad! I used to get stuck in a salad rut. My go to has always been greens, cheese, tomato and ranch dressing. Nothing wrong with that, but sometimes you’ve just gotta mix it up.
To keep things a bit more interesting I love mixing seasonal produce to make a salad. Spinach, avocados and citrus fruits are all in season right now. And this salad is a winning flavor combination.
Topped with my signature homemade balsamic vinaigrette, it has the perfect mix of sweet and tangy.😋
Plus I added a little crunch from the pine nuts. 👌🏻
You could use the canned mandarins if you want, but the fresh mandarins/ clementines are sooo much better. Plus they are readily available and affordable this time of year.

Spinach Salad with Mandarin Oranges, Avocado and Pine Nuts
Spinach salad with mandarins, avocado, pine nuts topped with the best balsamic vinaigrette.
Ingredients
- 2 cups raw spinach (I prefer baby spinach)
- 1 fresh mandarin orange or clementine* peeled and segmented
- 1/2 avocado sliced
- 1 Tablespoon pine nuts
- 2 Tablespoons Balsamic Vinaigrette
Instructions

Make a bed of spinach on a salad plate or bowl.

Top with the mandarin oranges, avocado slices, pine nuts and drizzle balsamic vinaigrette on top.

Serve immediately.

*Canned mandarins can be used in this salad, if preferred.
