My goal with this recipe was to go as simple as possible. I used a few simple ingredients, including a store-bought rotisserie chicken and a pre-mixed spice packet to make this extra simple. Meals like this one help you to forget the ready-made meals and the takeout menus, and create simple, flavorful dinners your whole family will enjoy.

I used a fajita version for this recipe.

And it was a win! Everybody loved it.

  • Knife and cutting board for cutting the veggies
  • Measuring cup

How to make Chicken Fajita Pasta in One Pot

First, gather your ingredients.

Ingredients

For best taste, always use the highest quality ingredients you have access to. 

To make this One-Pot Chicken Fajita Pasta recipe, you will need the following ingredients:

  • Olive Oil 
  • Onion
  • Bell Pepper
  • Chicken Broth
  • Milk
  • Canned Tomatoes with Green Chiles
  • Fajita Seasoning
  • Rotisserie Chicken Breast
  • Egg Noodles
  • Cilantro 
  • Green Onions
  • Avocado
  • Salt and Pepper

You can use butter in this dish instead of olive oil. Avocado oil is another good substitute.
Any pre-made fajita seasoning will work for this dish. Pick your favorite!

Cooking Chicken Fajita Pasta

One Pot Chicken Fajita Pasta is a simple recipe that can be made in just a few steps. Here is how to make it.

First, warm your pot over medium-low, add the oil, onions, and bell pepper. Cook for 5 minutes.

Next, stir in broth, tomatoes with chiles, milk, and the spice packet.

Add the cooked chicken and pasta; bring to a boil, then reduce heat to low, cover, and cook 4 1/2 minutes.

Stir the pasta, cover again, and cook another 4 1/2 minutes. Remove from the heat, uncover, and let it sit for 2 minutes.

Garnish with the cilantro, green onions, and avocados, if desired, and then serve hot!

Leftovers

Store leftovers in a covered container in the fridge for 2-3 days.

Always use common sense and good judgment when it comes to leftovers, though! If something looks or smells funky, don’t eat it.

Ingredients

  • 1 Tablespoon olive oil or butter
  • 1/2 medium onion diced
  • 1 bell pepper diced or cut into strips
  • 1 cup chicken broth or stock
  • 3 cups milk
  • 1 10 ounce can tomatoes with green chiles undrained
  • 1 packet Fajita seasoning
  • 1 Pound cooked chicken breast diced or shredded (I used rotisserie chicken)
  • 16 oz egg noodles or fusili pasta
  • Optional: fresh chopped cilantro green onions or avocado for garnish
  • salt and pepper to taste

Instructions

  1. Preheat your pot over medium low heat for about a minute, and add the oil.
  2. Add the onions and bell pepper, and cook until tender, about 5 minutes.
  3. Add the chicken broth, tomatoes with chiles, milk and spice packet, and stir to combine.
  4. Add the cooked chicken and pasta, and stir.
  5. Bring the liquids to a boil, and reduce the heat to low.
  6. Cover, and cook 4.5 minutes.
  7. Stir, recover, and cook until pasta is tender, about another 4.5 minutes.
  8. Stir, remove from heat, and let sit uncovered for 2 minutes to cool and for sauce to thicken.
  9. Garnish (if desired) with cilantro, green onions or avocado.
  10. Serve immediately.

    I am wondering if the chicken HAS to be added while cooking the pasta, could it be added after the pasta is cooked, I wonder if it would make a huge difference in the flavor? Just curious your opinion, thanks! I love one pot meals 🙂

      As long as you add the chicken in time to heat all the way through, I think that would work fine.
