Happy Monday everyone! I hope you all had a great weekend. We sure did!
We had some home-made pizza…

Some of us made a few messes in the kitchen…

I tested a recipe for the blog (coming soon: peach muffins)…
And I thank you all for the virtual high fives on Instagram yesterday when I zipped up a dress that I had not worn in I don’t know HOW many years.
Today I am sharing my weekly meal plan.

This week we will be hosting my in-laws Monday and Tuesday night. They are helping us with a few projects around our house, and I figured the least I could do is feed them!
I would not consider that poppyseed chicken recipe to be “healthy” since it uses cream of chicken condensed soup. We have made that for many years in my family, and I have been meaning to toy with the recipe to try and make my own alternative. But! When you are cooking for others…that is not the time to experiment. All of that to say…we are not perfect!
Also I am planning a trip to Costco later in the week, so I always work rotisserie chicken into my meal plan when that is the case.
Friday’s dinner is my own lightened up pesto recipe. It is so good that you may forget it is lightened up!
Breakfasts usually are smoothies, oatmeal, egg white sandwiches or scrambled eggs. Lunches are usually leftovers from the meals you see listed above, with the occasional sandwich, salad or wrap.

Wow Marjorie, big props on the dress! Nothing better than fitting into those clothes.
As far as healthy meals, I’m making a poached salmon with jicama, cucumber and lettuce. It’s like the ones you scoop into big lettuce leaves. Let’s hope I nail it ๐

Thanks Brittany! The pizza was yummy. We had that Friday night, and my son asked for it at breakfast, lunch and dinner all weekend long…LOL! He calls it “tizza.” ๐

Your homemade pizza always looks so good. Have you posted before what you actually put on it/how much/how you cook it/what crust you use so I can see? Lol Thank you. ๐

Thanks Staci! Several people have requested that, so it is on my list. I just haven’t gotten around to photographing and posting it yet.
I do make my own white/wheat crust in my Kitchenaid mixer. It is a modified recipe from my bread machine manual. I will work on sharing that soon.
