I hope you all had a great weekend! We enjoyed some great food. I made Rachael Ray’s black bean soup Friday night. I topped it with cheddar and avocado.
We had fun spending time with family.
My husband and I went out for dinner Saturday night for my birthday. We went to one of our favorite Birmingham spots, John’s City Diner. It is one of the places we had the first of many lunch dates, so it is very special to us!
Plus the food is really great. I got the special, which was almost exactly the same thing as when we went a few months ago: grouper with lemon butter sauce, corn grits and baby green beans. My husband and I also split a piece of peanut butter pie (not pictured, sorry!). I did not count points for my birthday meal!
As much as I enjoyed all the birthday celebrating last week, I am happy to be back on track with no excuses for extra indulgences! I am also sharing my weekly meal plan today.
I am carrying over a meal that never got made last week – chicken and broccoli with my lightened up pesto sauce over pasta.
Mustard herb salmon is also on the menu this week. I am also making my homemade pizza on Friday night. My parents will be visiting, so I will be making doubling up my recipe to make two pizzas to feed all of us.

Glad you had a great birthday, Marjorie! That meal out looked delish and totally worth it! I wish I was a meal planner like you! I’ve been eating a lot of prepared foods lately, and I really need to get back into cooking real food! It’s hard though when it’s just me, and some nights I don’t get around to dinner until after 8pm if I am trying to fit a workout in after work! Soon, very soon, I’m gonna get more creative in the kitchen, so I’ll check out your recipes for some inspiration!

Yes, I had a harder time meal planning when it was just me too. Now that I have two other people to feed, it puts slightly more positive pressure to actually prepare something.
