How to make cheesecake bars

First, gather your ingredients

Ingredients

For tastiest results, always use the best quality ingredients you have access to.

To make this cheesecake bars recipe, you will need the following ingredients:

  • Graham cracker crumbs – store bought, or crush them in a food processor
  • Light brown sugar
  • Unsalted butter, melted
  • Ground cinnamon
  • Kosher salt
  • Regular cream cheese, softened at room temperature
  • White sugar
  • Large eggs, at room temperature
  • Sour cream
  • Vanilla extract
  • Macerated strawberries (optional for topping)

Making graham cracker crust

To start, preheat the oven to 350 degrees F and line a 9×13 baking pan with foil, then lightly spray it with cooking spray to prevent sticking.

Next, make the graham cracker crust by combining graham cracker crumbs, light brown sugar, melted unsalted butter, ground cinnamon, and a pinch of kosher salt in a medium bowl.

Mix well, then pour the mixture into the prepared baking dish and press it out evenly into the bottom of the pan.

Place the pan in the oven and bake the crust for 10 minutes. Then remove it and let it cool while you mix up the cheesecake filling. Lower the oven temperature to 325 degrees F.

Making cheesecake bars

For the cheesecake filling, add the cream cheese and white sugar to a large bowl and beat it with a hand mixer until smooth.

You can also do this using a stand mixer with a paddle attachment. Add the eggs in one at a time, mixing as you add them to ensure they are fully incorporated into the filling. Then fold in the sour cream and vanilla.

Pour the cheesecake filling evenly over the crust and spread it out to the edges of the pan.

Place it into the oven and bake it for 40-45 minutes. It may have some small cracks in the top but that is okay. Remove it from the oven and let it cool completely.

Cover it and place it in the refrigerator to chill for at least 8 hours. Once the cheesecake is chilled, cut it into even size squares.

Serve it topped with macerated strawberries, if desired.

Ingredients

For the graham cracker crust

  • 3 cups graham cracker crumbs – I used store-bought crushed graham crackers
  • ¼ cup light brown sugar
  • ½ cup + 2 tablespoons unsalted butter – melted
  • ¼ teaspoon ground cinnamon
  • Pinch kosher salt

For the cheesecake filling

  • 4 8ounce packages of regular cream cheese – softened at room temperature
  • 1.5 cups white sugar
  • 4 large eggs – at room temperature
  • ¼ cup sour cream
  • 3 teaspoons vanilla extract

For serving

  • Macerated strawberries – optional for topping

Instructions
