This easy scalloped potatoes recipe is great to make a delicious side dish for the holidays, or anytime. It seriously makes the BEST scalloped potatoes.

How to make easy scalloped potatoes

First, gather your ingredients.

Ingredients

For tastiest results, always use the best quality ingredients you have access to.

To make these scalloped potatoes, you will need the following ingredients:

  • butter
  • onion
  • garlic
  • all purpose flour
  • vegetable stock
  • milk
  • salt and pepper
  • Yukon gold potatoes
  • cheddar cheese
  • parmesan cheese
  • thyme (optional)
  • parsley for topping (optional)

Make the cheese sauce

Before you begin to make the sauce, go ahead and preheat the oven to 400 degrees F and spray a 9×13 baking dish with cooking spray. Set aside.


Now, let’s make the cheesy, cream sauce. Heat a sauce pan to medium heat, add the butter and onion and toss and cook for 3-4 minutes. Add in the garlic and let it cook with the butter and onion for 1-2 minutes.


Whisk in the flour and cook for 1 minute then slowly add the stock and whisk until fully combined. Pour in the milk, salt and pepper. Whisk slowly for 2-3 minutes to allow the sauce to thicken then remove it from the heat.

Assembling scalloped potatoes

Now it is time to assemble the scalloped potatoes.

Layer ½ of the potatoes into the bottom of the pan in an even layer with some overlapping. Pour half of the cream sauce over the potatoes, spreading the sauce enough to mostly cover the potatoes.

Sprinkle half of the cheddar cheese over the potatoes along with half of the dried thyme. Repeat with one more layer and top with the grated parmesan cheese and the rest of the dried thyme.

Cover the pan with foil and bake for 30 minutes. Remove the foil and bake for 25-30 more minutes until the edges are nice and golden brown and the cheese is melted and bubbly.

Remove the scalloped potatoes from the oven, let cool (at least 10 minutes, and up to 30 minutes). This will allow the cheese sauce to thicken a bit more. Top with fresh chopped chives or parsley.

Ingredients

  • 4 tablespoons butter
  • 1 small yellow onion – peeled and diced
  • 3 cloves of garlic – peeled and minced
  • ¼ cup all purpose flour
  • 1 cup chicken or vegetable stock
  • 1 cup milk
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 4 pounds Yukon Gold potatoes – peeled and sliced into ⅛ thick rounds
  • 2 cups shredded cheddar cheese
  • 1 tablespoon dried thyme
  • ½ cup grated parmesan cheese
  • Fresh chopped parsley or chives for topping
