Easy Bran Muffins Recipe – A Family Favorite!

I’ve got a family favorite recipe to share with you today. My mom has made these pretty much my whole life, and I love them.

INGREDIENTS (makes about 2 dozen)

  • 1/2 cup canola oil
  • 1.5 cups white sugar
  • 2 eggs
  • 1 cup boiling water
  • 1 cup 100% bran cereal (bran buds)
  • 2.5 cups flour*
  • 2 cups buttermilk
  • 2.5 tsp baking soda
  • 1/2 tsp salt
  • 2 cups 100% bran flakes cereal (can use raisin bran, but my family doesn’t care for raisins)

*All purpose works best. If you want to go slightly healthier, you can do 1/2 whole wheat flour, 1/2 all purpose. The half and half version is what is pictured below, FYI.

INSTRUCTIONS

Mix canola oil, sugar and eggs with a mixer. In a separate container, combine the boiling water with the bran buds. Slowly pour cereal/water mixture over the egg mixture, as you mix on low speed. Add flour, buttermilk, baking soda, salt, and mix well. Add 2 cups of bran flakes (or raisin bran) cereal. Spoon into a greased muffin tin, or lined baking cups (about 1/2 full). Bake for about 15 minutes at 450 degrees, until toothpick comes out clean.

The batter will keep in the fridge for a couple weeks, if you don’t wish to make 2 dozen all at once.

Serve warm, slice in half with butter. Enjoy!
