Ingredients

  • 2 cups mixed greens
  • 1 cup fresh watermelon chunks
  • 1/2 Tablespoon feta cheese crumbles
  • leaves Basil chopped or torn
  • Balsamic vinaigrette to taste

Instructions

  1. Make a bed of greens on a plate or in a bowl.

  2. Add the watermelon chunks.
  3. Top with feta cheese crumbles, basil and balsamic vinaigrette.
  4. Serve immediately.

Recipe Notes

I am writing the recipe for one single serving, but it would be very easy to bulk this up for a crowd. You can use the slider on the recipe card to increase the servings.

I would not suggest making it ahead of time, because the watermelon will give off a lot of juice. I would suggest assembling it just prior to eating.
