Ingredients

  • 1 cup Instant Pot jasmine rice (or any cooked rice or quinoa)
  • 1/2 cup Instant Pot black beans (or canned beans)
  • 1/4 cup tomatoes diced
  • 1/4 cup corn kernels
  • 1/4 avocado (diced, I like mine lightly salted)
  • 1 Tablespoon cilantro
  • 2 Tablespoons salsa
  • other options: jalapeno peppers, hot sauce, sauteed bell peppers, onions, tortilla chips or anything else that sounds good

Instructions

  1. Prepare the Instant Pot black beans and Instant Pot jasmine rice per recipe instructions.

  2. Layer any of the suggested toppings, and enjoy!
