These vegan burrito bowls are delicious and filling, perfect for a meatless meal that everybody loves!
My daughter and I have been eating this on repeat lately for lunches. I make a big batch of jasmine rice and black beans in my Instant Pot, and we eat it all week.
It is easy to reheat the beans and rice, and we layer a variety of other toppings over that: avocado (or guacamole if we have any), corn, tomatoes, salsa, cilantro and a squeeze of lime is always good if we have some on hand.
You can use canned beans in this recipe if that is all you have handy. But the seasoning on my own black beans makes this sooo much tastier!😋
I also like to add mixed baby greens on top of mine for some extra veggies. This is really more of a concept than a “recipe” since you can tailor it to whatever you like and what you have on hand.

Vegan Burrito Bowls
These vegan burrito bowls are delicious and filling, perfect for a meatless meal that everybody loves!
Ingredients
- 1 cup Instant Pot jasmine rice (or any cooked rice or quinoa)
- 1/2 cup Instant Pot black beans (or canned beans)
- 1/4 cup tomatoes diced
- 1/4 cup corn kernels
- 1/4 avocado (diced, I like mine lightly salted)
- 1 Tablespoon cilantro
- 2 Tablespoons salsa
- other options: jalapeno peppers, hot sauce, sauteed bell peppers, onions, tortilla chips or anything else that sounds good
Instructions

Prepare the Instant Pot black beans and Instant Pot jasmine rice per recipe instructions.

Layer any of the suggested toppings, and enjoy!

Time to make noted in recipe card is assembly/ prep time only. Cook time for dry beans is about an hour, and rice is about 20 minutes. Canned beans are much quicker and only need to be warmed.
