Vegan Banana Bread

This vegan banana bread recipe is not only delicious but incredibly moist and easy to whip up with simple ingredients.

Ingredients

  • 2-3 medium ripe bananas - peeled and mashed
  • ¼ cup unsweetened applesauce (or you can sub flax egg)
  • ¾ cup sugar
  • cup melted butter
  • 1 teaspoon vanilla extract
  • 1.5 cups all purpose flour
  • ½ teaspoon baking soda
  • Pinch of salt (you may need more if you use unsalted butter)

Instructions

  1. Preheat the oven to 350 degrees F and spray a loaf pan with cooking spray. Set aside.
  2. In a large mixing bowl combine the mashed bananas, applesauce, butter and sugar. Add in the vanilla and mix.

  3. Next, sift (or just mix) together your dry ingredients: flour, baking soda, and a pinch of salt. Then, mix these well into the wet ingredients in the large bowl.

  4. Pour the batter into the loaf pan and spread it out evenly with a rubber spatula or spoon.
  5. Bake the banana bread on the center rack of the preheated oven for 50-55 minutes until a toothpick inserted comes out mostly clean, with a few wet crumbs on it.
  6. Remove the banana bread from the oven, let it cool, slice and enjoy.
