How to Make Vegan Banana Bread

First, gather your ingredients.

Ingredients

For best taste, always use the highest quality ingredients you have access to.

To make this Vegan Banana Bread recipe, you will need the following ingredients:

  • Bananas
  • Applesauce (or flax egg)
  • Sugar
  • Vegan butter (or butter of choice for omnivores)
  • Vanilla extract
  • All-purpose flour
  • Baking soda
  • Salt

Remember, for the best results, make sure all your ingredients, especially the wet ingredients like applesauce or flax egg, are at room temperature.

Overripe, spotty bananas are the secret ingredient to making the best vegan banana bread. If you want to increase the moisture, using apple sauce or even a little oil (avocado oil, olive oil) can be a great recipe tweak.

Cooking Vegan Banana Bread

Vegan Banana Bread is a delightful quick bread that’s straightforward to make. Here is how to make it!

First, preheat the oven to 350 degrees F and spray a loaf pan with cooking spray. Set aside. In a large mixing bowl combine the mashed bananas, applesauce, butter and sugar. Add in the vanilla and mix.

Next, sift (or just mix) together your dry ingredients: flour, baking soda, and a pinch of salt. Then, mix these well into the wet ingredients in the large bowl.

The batter will look like this.

Pour the batter into the prepared loaf pan and spread it out evenly with a rubber spatula or spoon.

Bake the banana bread on the center rack of the preheated oven for 50-55 minutes until a toothpick inserted comes out mostly clean, with a few wet crumbs on it.

After baking, the best way to let it cool is on a cooling rack. This allows for even air circulation, ensuring a moist crumb. Slice, serve, and enjoy the delicious vegan banana bread.

Leftovers

Store leftovers in an airtight container in the refrigerator for up to 5 days.

Always use common sense and good judgement when it comes to leftovers, though! If something looks or smells funky, don’t eat it. If you’ve baked a large batch and can’t consume it within a few days, consider slicing and storing your vegan banana bread in a freezer bag to keep its freshness intact.

Recipe modifcations

For best results, I recommend sticking to the original recipe as written. A couple of low risk enhancers: For a richer taste, try adding vegan chocolate chips to the batter or a spread of peanut butter (after baking, as a finisher) on top of a slice.

For those adventurous bakers who love tweaking recipes, feel free to experiment switching up the sugar with coconut sugar. If you’re looking for a healthier twist, you can even experiment with whole wheat flour or oat flour instead of the regular all-purpose flour. Please note: I have not tested these out myself, and it may require other adjustments.

Those who are gluten-free might try 1:1 Bob’s Red Mill GF flour as a substitute. Again, I have not tested those myself. But I have heard it is a fairly reliable substitute.

Ingredients
