8ouncespasta penne or farfalle/ bowtie are my favorites for this recipe - cooked according to package instructions
2poundsboneless skinless chicken breast sliced
½teaspoonkosher salt
¼teaspoonground black pepper
2tablespoonsbutter
1tablespoonolive oil
3clovesgarlic - peeled and minced
1tablespoonItalian seasoning
1cupsun-dried tomatoes
1cupheavy cream
1/4cupgrated parmesan cheese - plus more for topping
2cupsfresh spinach
Fresh chopped basil - optional for topping
Instructions
Heat a medium skillet to medium-high heat and add the butter. Season the chicken with salt and pepper, then add it to the pan with the butter. Toss and cook for 3-4 minutes per side then remove the chicken and place it onto a clean plate.
Add the oil to the same pan you cooked the chicken in. Then add the garlic and cook for 1 minute, tossing it in the oil as it cooks. Add Italian seasoning, tomatoes, and cream. Season with salt and pepper and toss and cook the sauce on medium-low heat for 2 minutes. Add the cheese and spinach and cook for 3-4 minutes to melt the cheese and wilt the spinach.
Then add the pasta and chicken and toss it all together in the sauce and cook for 2-3 minutes. Remove the pan from the heat and top with fresh chopped basil and more parmesan cheese if desired.
Divide into bowls, serve hot and enjoy!
