Ingredients
1poundraw shrimp - peeled and deveined
1tablespoonolive oil
3tablespoonscreole/ cajun seasoning
1medium yellow onion - peeled and diced
1medium green bell pepper - diced
3ribs of celery - diced
1carrot - medium, peeled and diced
3clovesgarlic - peeled and minced
115 ounces can of tomato sauce
2teaspoonshoney
1teaspoondried oregano
1teaspoondried basil
2bay leaves
Cooked jasmine rice - optional for serving
Fresh chopped parsley - optional for serving
salt and pepperto taste
Instructions
Place the shrimp into a medium bowl, and drizzle it with 1 tablespoon of olive oil and 1 tablespoon of creole seasoning. Toss and set aside.
Heat up a skillet to medium heat and add the onion, pepper, celery, carrot, and garlic. Season with salt and pepper and toss and cook the veggies for 2-3 minutes.
Add the tomato sauce, honey, oregano, basil, and the rest of the creole seasoning. Stir and let it cook for 2 minutes. Then add the bay leaves to the sauce and cover and simmer for 10 minutes.
Then add the seasoned shrimp to the sauce and cook the shrimp in the sauce until it is pink and cooked through. This should only take a few minutes.
Remove the pan from the heat. Serve the creole shrimp over cooked rice and garnish with a sprinkle of fresh chopped parsley.
