Ingredients

  • 10 ounces soba noodles or spaghetti
  • ¼ cup tamari or soy sauce
  • ¼ cup rice vinegar
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons toasted sesame oil
  • 2 teaspoons maple syrup
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • Chopped scallions - for garnish
  • Toasted sesame seeds - for garnish

Instructions

  1. Cook the noodles according to the package directions.
  2. Mix up the sauce by combining the remaining ingredients in a medium bowl and mix well to combine.
  3. Add the sauce to the cooked noodles and toss the noodles in the sauce to coat them really well. Serve warm or cold with a garnish of chopped scallions and sesame seeds.
