Ingredients

  • 2 large par-baked store bought pizza crusts
  • 1 cup jarred pizza/marinara sauce
  • 8 ounces refried beans
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup corn kernels frozen or canned
  • 1/2 cup sliced black olives
  • 1/2 red bell pepper thinly sliced
  • 1/2 medium white onion thinly sliced
  • Olive oil to drizzle
  • Store-bought taco sauce to drizzle
  • 2 tablespoons fresh chopped cilantro

Instructions

  1. Preheat the oven to 425°F.
  2. Place each pizza crust onto a parchment lined baking sheet.
  3. Spread pizza sauce onto each crust.
  4. Top each pizza crust with refried beans, olives, corn, shredded cheese, peppers and onion. Drizzle each pizza with a bit of olive oil.
  5. Bake for 15 minutes until the cheese is melted and bubbly.
  6. Drizzle with taco sauce and sprinkle with cilantro. Serve right away!

Recipe Notes

  • You can use a store-bought pre-baked pizza crust or use homemade or store-bought raw pizza dough & roll into two large crusts. You may need to bake the pizza a bit longer if starting with raw dough.
  • Easy swap the refried beans for canned black beans (rinse them and dry before!)
