Ingredients
1/2small white onionfinely chopped (or 1/4 large onion)
1medium jalapenofinely chopped (seeds removed)
1clovegarlicminced
1/3cuplime juiceapprox. 4 limes
3roma tomatoesseeds removed and chopped small
4medium ripe Haas avocadoschopped small
1/2cupfinely chopped cilantro
2tablespoonsolive oil
1 1/4teaspoonKosher salt
1/4teaspoonfreshly ground black pepper
1/2teaspoonground cumin
Instructions
In a large bowl, combine the onion, jalapeno and garlic with lime juice. Let sit for 15
minutes to decrease the sharpness of the ingredients.
Next add the tomatoes, avocado and cilantro. Mix in the olive oil, salt, pepper and cumin.
Taste and add more salt or lime if needed.
Recipe Notes
In order to prevent the avocado from turning brown, be sure to add it to the salsa last. You can always prepare Steps 1 & 2 earlier in the day (or a day ahead) and then mix in the avocado before serving.
