This creamy coleslaw recipe is a tradition at all the spring and summer barbecues and pot lucks. And it is super simple to make too.

Ingredients

Slaw

  • 1 cup shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots

Dressing

  • ¾ cup mayo
  • ¼ cup white wine vinegar
  • 2-3 tablespoons maple syrup or honey
  • 1 teaspoon celery seeds
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped parsley

Instructions

  1. Add the cabbage and carrots to a large mixing bowl and toss to combine.
  2. In a separate small mixing bowl, combine the mayo, vinegar, maple syrup, celery seeds, salt and pepper and whisk to combine into a tangy, creamy dressing.
  3. Pour the dressing over the slaw and toss well to combine. Fold in the parsley.
  4. Cover and chill for 1 hour before serving.

If you want to make this lighter, you can cut some of the mayo with Greek yogurt. For best taste, I recommend using all mayo though.
