Ingredients
5cupslow sodium chicken stock or broth
1ozcan diced tomatoesundrained, 14.5
1medium yellow oniondiced
4clovesgarlicminced
2teaspoonschili powder
2teaspoonscumin
1teaspoonpaprika
1teaspoonground coriander
Salt and pepperto taste
1poundboneless skinless chicken breastsfrozen
1can black beansdrained and rinsed, 14.5 ounce
2cupsfrozen corn kernels
1Tbspfresh lime juice
1/4cupchopped fresh cilantro
Instructions
Add the chicken broth, tomatoes, onion, garlic, spices and chicken to the slow cooker.
Cook on low for about 7 hours. (You may not need as much time if you start with thawed chicken)
Remove the chicken, and shred with two forks; return the chicken to the slow cooker.
Add the beans and corn, and cook for another hour on low.
