Ingredients

  • 3 cups frozen hash browns, thawed*
  • 1 pound ground pork breakfast sausage (turkey sausage will work too)
  • 2 cups cheddar cheese, shredded (it melts better if you shred your own from a block of cheddar)
  • 1/2 green bell pepper, diced
  • 12 eggs, beaten
  • 2 cups milk (I used 2%)
  • 1/2 teaspoon salt
  • 1/2 teaspoon hot sauce (optional)

Instructions

  1. Preheat the over to 350.

  2. Brown the sausage until fully cooked (mine took about 8 minutes), and drain the fat.

  3. Spray a casserole dish with cooking spray.

  4. Add the hash browns (thawed) to the bottom of the dish.

  5. Layer the cooked sausage, then the shredded cheese, and then the diced peppers.

  6. Beat the eggs, milk, salt and hot sauce together in a large mixing bowl.

  7. Pour the egg mixture into the casserole dish, over the other ingredients.

  8. Bake until fully cooked through the center, about 50 minutes.

Recipe Notes

*I always forget to thaw my hash browns.😬🙈 So prior to browning my sausage, I just brown them in the same skillet (with a little cooking spray), and then put them in the bottom of the casserole dish. The I lightly wipe out the pan again before browning the sausage.
