Breakfast casserole with sausage, hash browns, peppers and cheese is perfect for a family brunch, and we love making it during the holidays.
Preheat the over to 350.
Brown the sausage until fully cooked (mine took about 8 minutes), and drain the fat.
Spray a casserole dish with cooking spray.
Add the hash browns (thawed) to the bottom of the dish.
Layer the cooked sausage, then the shredded cheese, and then the diced peppers.
Beat the eggs, milk, salt and hot sauce together in a large mixing bowl.
Pour the egg mixture into the casserole dish, over the other ingredients.
Bake until fully cooked through the center, about 50 minutes.
*I always forget to thaw my hash browns.😬🙈 So prior to browning my sausage, I just brown them in the same skillet (with a little cooking spray), and then put them in the bottom of the casserole dish. The I lightly wipe out the pan again before browning the sausage.
