I love how simple this recipe is. Bonus points: if you have any family members that need to avoid gluten, this recipe happens to be gluten free. We don’t have that issue in our home, thankfully. And we still love it! Gluten or not, if it’s tasty, we eat it. 😉👊🏻
We usually make breakfast casserole when we are together for Christmas as a family. There is just something about lazy mornings when you stay in your pajamas a little longer, sip coffee without being in a rush to get somewhere. And really I love the (rare) opportunity to just BE with the ones I love. That is what this breakfast casserole reminds me of.❤️
I love serving it with some simple slide up fruit and coffee. Something easy works best, especially on Christmas morning, where the focus is on being together, not slaving away in the kitchen.

- Mixing Bowl
- Liquid measuring cup
- Measuring cups and spoons

- Large skillet – for browning sausage
- Casserole dish – I used this 4 quart Corningware one, but a standard 9 x 13 casserole dish works too

Breakfast Casserole with Sausage, Hash Browns and Pepper
Breakfast casserole with sausage, hash browns, peppers and cheese is perfect for a family brunch, and we love making it during the holidays.
Ingredients
- 3 cups frozen hash browns, thawed*
- 1 pound ground pork breakfast sausage (turkey sausage will work too)
- 2 cups cheddar cheese, shredded (it melts better if you shred your own from a block of cheddar)
- 1/2 green bell pepper, diced
- 12 eggs, beaten
- 2 cups milk (I used 2%)
- 1/2 teaspoon salt
- 1/2 teaspoon hot sauce (optional)
Instructions

Preheat the over to 350.

Brown the sausage until fully cooked (mine took about 8 minutes), and drain the fat.

Spray a casserole dish with cooking spray.

Add the hash browns (thawed) to the bottom of the dish.

Layer the cooked sausage, then the shredded cheese, and then the diced peppers.

Beat the eggs, milk, salt and hot sauce together in a large mixing bowl.

Pour the egg mixture into the casserole dish, over the other ingredients.

Bake until fully cooked through the center, about 50 minutes.
Recipe Notes
*I always forget to thaw my hash browns.😬🙈 So prior to browning my sausage, I just brown them in the same skillet (with a little cooking spray), and then put them in the bottom of the casserole dish. The I lightly wipe out the pan again before browning the sausage.

Have you read any nutritional book in the last 10 years, eggs help good cholesterol, not bad cholesterol. Enjoy everything in moderation and eat a variety of foods 🙂
