Ingredients

For the salad

  • 15 ounces black eyed peas one can - drained and rinsed well
  • 1 seedless English cucumber - diced
  • 1 red bell pepper - trimmed, seeds removed and diced
  • 5 ounces cherry tomatoes - quartered
  • 1 cup corn
  • ¼ cup red onion - diced
  • chopped parsley - optional for topping

For the vinaigrette dressing

  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon maple syrup or honey
  • 1 teaspoon dried oregano
  • Kosher salt
  • Ground black pepper

Instructions

  1. Add all salad ingredients, except the parsley to a large bowl.
  2. Make the dressing by combining all of the dressing ingredients in a mason jar and then shake well to emulsify.
  3. Pour the dressing over the salad and toss everything together then top the salad with the chopped parsley.
