Ingredients

  • 4 cod filets - about 4-6 ounces each
  • salt & pepper to taste
  • 4 Tablespoons butter melted
  • 2 Tablespoons olive oil
  • 4 tablespoons fresh lemon juice
  • ¼ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon dried parsley
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat the oven to 400 degrees F and spray a baking dish with cooking spray.
  2. Dry the fish with a clean paper towel and season it well with salt and pepper. Then place the fish into the prepared baking dish.
  3. Make the lemon butter sauce. In a medium size mixing bowl combine the olive oil, melted butter, lemon juice, chili powder, garlic powder, onion powder, dried parsley and a pinch of salt and pepper. Whisk well to combine everything together.
  4. Pour the mixture evenly over the cod. Place the cod into the oven and bake it at 400 degrees F for 12-15 minutes. Thicker cuts of fish may take up to 20 minutes. The fish should be flakey when done.
  5. Serve over rice or with a side of green beans.
