Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. You can also use a sprayed 9x13 baking dish.
Add the chicken thighs to a bowl and pat them dry with a clean paper towel. Drizzle the chicken with olive oil and toss to coat it in the oil. Mix the seasoning( garlic powder, italian seasoning, paprika, salt and pepper) in a small bowl and sprinkle the seasoning over the chicken. Toss to coat the chicken in the seasoning making sure to coat it on all sides.
Transfer the chicken thighs to the baking sheet and arrange them in a single layer so they are not overlapping. Bake the chicken in the preheated oven for 35-40 minutes, until the internal temperature of the chicken reaches 165 degrees F.
Once the chicken is done, remove it from the oven and let it cool for a few minutes then serve it with your favorite side dishes.
