Dark meat chicken is very flavorful and juicy, and this has become a favorite recipe. I am using skin-on, bone-in chicken thighs.
You can adapt this recipe to use boneless skinless chicken thighs, with a bit less cook time. More of that in the notes in the recipe card below.

To make this baked chicken thighs recipe, you will need a few simple ingredients:
- bone-in, skin-on chicken thighs
- olive oil
- garlic powder
- Italian seasoning
- paprika
- salt
- ground black pepper
Prepare and Season
Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. You can also use a sprayed 9×13 baking dish.
Add the chicken thighs to a bowl and pat them dry with clean paper towels. Drizzle the chicken with olive oil and toss to coat it in the oil.
Mix the seasoning( garlic powder, Italian seasoning, paprika, salt and pepper) in a small bowl and sprinkle the seasoning over the chicken. Toss to coat the chicken in the seasoning making sure to coat it on all sides.
Transfer the chicken thighs to the baking sheet and arrange them in a single layer so they are not overlapping.
If you have it, a pan grate as seen above, allows the juices to drip off. You can definitely make this recipe without it, though.
Cooking baked chicken thighs
Bake the chicken in the preheated oven for 35-40 minutes, until the internal temperature of the chicken reaches an internal temperature of 165 degrees F, as read on a meat thermometer.
Once the chicken is done, remove it from the oven and let it cool for a few minutes.
Then serve it with your favorite side dishes.
Storage and leftovers
How long are cooked chicken thighs good in the refrigerator? 3 to 4 days is a safe bet. Always store leftovers covered or in an airtight container.
