These air fryer egg rolls are a lighter version of your restaurant favorite. They use far less oil than their traditional counterparts, thanks to the help of the trusty air fryer.
Heat up a medium size skillet to medium heat.
Once the pan is hot, add in the ground meat and break it up with a spatula or wooden spoon. Cook until it is nice and golden brown and cooked through. Transfer the cooked meat to a bowl or plate.
In the same pan you cooked the meat in, turn the heat down to medium-low heat, add in 1 tablespoon sesame oil.
Once the oil is hot, add in the garlic, ginger, celery and onion. Season with salt and pepper, toss and cook for about 3-4 minutes until the veggies are nice and soft and translucent.
Meanwhile, combine the soy sauce, maple syrup, vinegar and a pinch of salt and pepper in a small mixing bowl and whisk to combine.
Pour the sauce over the veggies in the pan and cook for 2 minutes.
Add the meat back into the pan and toss it with the veggies and sauce. Turn the heat off and let the mixture cool for a few minutes.
To assemble and wrap the egg rolls. Place one egg roll wrapper so one of the tips of the wrapper is facing towards you.
Dip one of your fingers in some water and run your finger around the edge of the egg roll wrapper.
Place about 1 tablespoon of the veggie and meat filling into the bottom half of the wrapper that is facing towards you. Roll the wrapper over the filling and continue rolling it up away from you as you fold in the sides of the wrapper until you reach the end like a burrito.
Seal the edges with water. You can also use egg wash (1 egg lightly beaten in a small bowl with a ½ teaspoon of water). Repeat until all of the egg rolls are assembled, makes about 12-15 egg rolls.
Spray the basket of the air fryer basket with the olive oil cooking spray and place the egg rolls into the basket in a single layer (you will likely have to do this in batches depending on the size of your air fryer).
Spray the egg rolls with more cooking spray, close the basket and cook at 400 degrees F for 6 minutes, flip the egg rolls over, spray the other side with cooking spray and cook them for 4 more minutes until they are super crispy and golden brown on all sides.
Continue the above steps until you have cooked all of the egg rolls.
